Leftover chocolate might be a bit of an oxymoron, but sometimes around the holidays you just get so much of it! Whether it’s been brought over by guests, or shimmied its way down the chimney with Santa, this is the time of year for chocolate overload, and this week I’m upping the ante by elevating it to a next level sweet treat.

Starting with 12lbs of my Ultimate Chocolate Cake, I’m stacking these babies up with all of my fave fillings- swiss meringue chocolate buttercream, chocolate ganache, and sweet sweet caramel! Layered together with classic holiday chocolates these cakes are begging that you don’t have any healthy eating new year's resolutions!

Simple Syrup

Yo’s Famous Italian Meringue Buttercream

Yo’s Chocolate Swiss Meringue Buttercream

Instant Coffee

Turtles, Toblerone, Almond Nougat, Assorted Chocolates

Decorating The Cakes

White Chocolate

Milk Chocolate

Dark Chocolate

Red Candy Melts

Cake 1: Assorted Chocolates

Mix concentrated instant coffee into your vanilla frosting, and stack your cake as follows:

Coffee Frosting
Piped Ganache

Place your cake in the fridge to chill

Cake 2: Turtles

Grab your turtles, and stack this cake up as follows:

Chocolate Ganache
Caramel Drizzle

Chill your cake until firm.

Cake 3: Toblerone

Break your toblerone into its individual pieces and stack as follows:

Italian Meringue Buttercream

Place your cake in the fridge to chill

A Little Off The Top

Carve your cakes slightly, adding a swirl to one, ripples to another, and bumps to the third.

Nuggets of Nougat

Place chopped nougat on top of your toblerone cake

Draped In Chocolate

Melt your white, dark, and milk chocolate, and pour over your cakes as follows:

White- Toblerone

Dark- Assorted

Milk- Turtles


Finish your cakes off with quick decorations as follows:

Dark Chocolate Drizzle- White Chocolate Cake

Red Chocolate Drizzle- Milk Chocolate Cake

Cocoa Powder Dusting- Dark Chocolate Cake
